Creamy Nigori Sake, this Momokawa is a slightly lighter and certified organic version of our popular Pearl. Silky-smoothe, complex aroma and dynamic flavors retained from minimal pressing, this Nigori simply gives you more of the rich rice texture so often removed. It takes more work to brew a USDA certified sake. Our brewery must be sterilized thorughly between batches, the rice must be from a certified grower and every step of the brewing process is reviewed, double checked and approved by Oregon Tilth, our USDA certifier.

SAYURI means "a little lily", which reminds us of the delicate image of Japanese culture. In actuality, the word "yuri", or "lily", has the meaning in floral terms of "chastity" and "innocence", and "SAYURI" is also used as a name for Japanese girls and women. We created SAYURI as an embodied gracefulness of Japan. Using only selected rice and rice koji, this is pure Nigori sake brewed up carefully with the natural water of Rokko.

MURAI Sake (Nigori Genshu), 720 ml

Take a big step back in time, before modernization brought the concept of filtration to saké brewers. Step back to a simple time when saké was fresh, unfiltered and undiluted. Nigori means "Cloudy," or "Unfiltered" which comes from the rice sediment that remains in the saké after it passes through a very coarse mesh and often after some of the fermenting mash is added back. Thicker and unrefined, unlike most saké, Nigori is to saké as Hefeweizen is to beer — thick and creamy.Nigori Genshu: Roughly filtered saké, a classic, cask strength, antique style beverage with fermenting mash remaining after a rough filtration removes heavier particles.
